VANILLA BEAN SYRUP COFFEE

This is the basic syrup to use in every cup of coffee. Hot, French Press, Blender creations coffee, Cold Brew , Iced coffee drinks and even Nitro Cold Brew the flavor of “Vanilla” helps balance out the coffee.

We have two basic recipes, one only use PURE Vanilla Extract and the other use of a Madagascar Vanilla Bean in the process: OR mix both Vanilla Bean plus a little Vanilla Extract. NOT imitation vanilla extract is just not the same, after all this is your coffee, make it special

This is one of the favorites for coffee lovers. Nothing adds a bit of class than a little Caramel Syrup in your coffee. My favorite is our creation Caramel recipe with a “pinch” of sea salt too: This for the best coffee ever: The Sea Salt helps cut the bitterness with some “hot” brewed coffees, only to ask James Hoffman his explanation on a pinch of salt in your coffee.

Double Double a SoCal Classic beach Burger

Here is a real CLASSIC HAMBURGER, anyone who has visited or lived in Southern California, knows about the DOUBLE DOUBLE<  

In N Out made it famous with grilled "mustard", burger in the 1970's, still on the Secret Menu of In n Out too.  Get the full Secret Menu, click here. 

NOTE:  The secret sauce recipe too, so easy to make, it is just wonderful sauce on any backyard dudes burger.  Mix ingredients below and enjoy a California Beach Classic. 

  • 1/4 cup Mayonnaise

  • 2 tbsp Ketchup

  • 1 tbsp Sweet relish [ i add two tbsp]

  • squeeze of mustard

  • 1 tsp Vinegar [dill pickle juice works too]

  • 1 tsp Sugar

  • My personal addition to this is a dash of Worcestershire Sauce

You have hit a sweet spot in my Summer Time BBQ parties, give me that sweet corn on the cobb, grilled warm a few caramelized burn kernels, fresh butter and a pinch of sea salt.  I can all most taste summer in my mouth as I write this, how about you? 

Why give you other people boring recipes I decided to let you be the guru today, let your imagination go.  Now a quick stop to your super's deli to pick out some exotic toppings your set to let your guest create their own "corn creation delight". 

Here are a few topping suggestions to help get your mind in gear.

Fresh Butter [well dah?] 

Cheddar Wiz dip

Feta Cheese crumbles & Caesar dressing drizzle 

Blu Cheese crumbles

Apple Wood Smoked Bacon to wrap an ear or two

BBQ Rub sprinkle to spice up the bacon before wrap

Pesto & Parm 

BBQ Sauce & Crushed Potato Chips 

Buffalo sauce [hot spice food group]

Old Bay Spice Season & Mayo mix 

My favourite is butter melted then sprinkle Lawyrs Lemon Pepper & Season Salt

The crew over at Samuel Adams has been drinking to much beer for this idea.  I never want to waste a beer, un heard of pouring it on wood chips, but heck I can give it a try at least once.

This will kick up your flavour a notch, a nice Craft Beer, pick your favourite, drink one first, then soak your apple wood chips for thirty minutes, shake them off, put them directly on hot coals or into your smoker container [ if on a gas grill] even a aluminum pan cover with aluminum foil and punch a few holes in it.  Place on one side of your gas grill, works too. 

I see other blog post on using wine, hum?  Say what?  Waste good wine, NO.  I can take pouring a beer on the chips once in a while, just not good wine. 

One more way to make an excuse to drink a beer while on bbq duty, someone has to do it. 

Remember the DUDES CRED , never drink and drive, always have a designated driver at your bbq get together or at least have UBER App on your iPhone works for me too.  Just do not drive if you have even ONE BEER, remember we want you around for the next party too.

Today we are in the 4th of JULY weekend, where Hot Dogs and Hamburgers are going to be the normal backyard grilling item across America. 

I say, great for the "kids" of this world, but us grown-up's need our MEAT. 

Nothing say Steak like the Porterhouse cut of meat.  The finest cut on the steer as i see it.  Comes with two cuts of tender flavour, on every Porterhouse.   The "T" shaped bone in the centre divides this cut of meat into two different steaks.  The smaller side of a Porterhouse Steak is FILIT MIGION a centre cut of the tenderloin is attached to the bone of a PorterHouse, in this image above this is on the left side. 

Now the other favourite steak everyone loves is a NEW YORK cut, which you got it, the other half of a Porterhouse Steak, is a New York cut.  Image above shown on the right side. 

To all us purist, if you were to cut out the Filet Mignon side, leave the bone attached to the New York, this is called a bone in New York, most common name is a "T" Bone steak, meaning the other side of the T, where you may find the Filet Mignon part is a small patch of meat or none at all. 

A true PORTERHOUSE is both worlds of great steaks on one cut of beef, New York and a Filet Mignon, a true steak lovers paradise. 

Grilling instruction: 

Remember to take your steak's temperature is the only way to tell how "done" it really is.  Remove from the grill about 10 degrees less than your target temp, let your steak rest for 5 minutes, it will continue to cook. 

TARGET TEMP

Rare 140 F  

Medium Rare 145 F  

Medium 155 F

Medium Well 160 F

Well Done 165+ 170 F  to me this is way too much cooking !!  

REMOVE FROM GRILL TO REST

Remove from grill @ 130 F

Remove @ 135 F  

Remove @ 145 F

Remove @ 150 F

Remove @ 155+ 160 F
